Saturday Business

Even though yesterday was a day of leisure, I had a lot to do. It is time for the church's annual pie social. I made pistachio cheesecake, chocolate cheesecake and a banana cream cheesecake.

Fool proof Cheesecake(If I can do it,you can!)
1 graham pie crust
1 cool whip
8oz cream cheese(softened)
1 small box jello
1 splash of cold milk

In mixing bowl mix everything but pie crust, mix until it looks pretty smooth. Dump into pie crust. Chill until firm. Enjoy!

After making 3 pies, we headed to a nearby bigger city to enjoy water, warm water.




While the boys enjoyed the pool, I enjoyed the hot tub and sauna.

Then we headed to Perkins for dinner. Kids eat free on Saturday nights. After a nice dinner we went to MooseWood for a walk through the haunted bog.

It was very fun, the boys did jump out of their skins once or twice. What a nice day.

I was sent a Aromatherapy Candle - in "geranium" scent. The candle comes in a very pretty tin, that is just the right size for gift giving or traveling tucked away in a suit case. The candle burns evenly and steady with out flickering. I did not really care for the geranium scent too much. My husband also did not care for the scent.

My review: I am a person that gets UTIs very often. Just last week I had that feeling, like I was going to get a UTI. I started taking Cystex as directed on the bottle. I took it for about three days and "that feeling" was gone. I was so happy to have caught it early on and avoid a trip to the doctor's office.

My thoughts:
In today's society, there is so much war, famine and just plain hatred. I like to find books that are good for the soul, lets me know that there is a plan and reason for all things. There are things to look forward to, there is reason to believe in good and things to come.

I have read "A Year with Jesus" through in it's entirety. It is a good read, but more then that, my soul feels fulfilled after putting it down. I will reread this book on a daily basis, one page - one at a time just before I turn off the light at night. It has a way of making me feel peaceful.

I would recommend this book to a friend.

Life Insurance

Life insurance is such an important topic, but often not discussed in many families. Mine is no different. I have two parents that are starting to have health issues and a Grama that is 80 years old. I had to find a way to start the conversation with each of them.

What is cooking Thursday




The weather here in the UP of MI sure has taken a drastic change. It went from being in the high 70s last week to being just over freezing. So with the change of weather is a change in cooking. Lets start with baking, I made this and a few more just like it at work today.


I was pretty disappointed when I cut it opened to find such huge air pockets.


The other day I pulled a huge package of chicken wings from the freezer that I bought on a HUGE sale. I am a very squeamish person when it comes to cooking chicken on the bone. For the record, DH thought I would just see the chicken juice and pitch it all in the trash, but NO, I am on a BIGGGG frugal mission lately. Throwing the chicken in the trash pail would be like throwing money down the drain. I turned the crock pot on high, sprayed it with cooking spray and dumped the entire package in and let it be for about 4 hours. The children kept asking what the yummy smell was. They each ate three entire wings; and that was after dinner and they were full.

This is a picture of what chicken wings I have left. We will have them over the weekend with BBQ sauce.

After I spent a week last summer at my grandmothers house, I encouraged her to look into direct tv deals. I love my grandmother and always have a great time with her, but because of medical problems she can’t walk around for long periods of time. We used to love to go shopping, but now she gets tired easily. We ended up staying at home and working around the house most of the time. In the evenings, after dinner, we watched some television. Grandma has basic cable. I really just don’t think that she knows what she is missing. With as much time as she spends at home at night, I think that she would really enjoy watching some of the specialty networks. I also think that she would really like to watch some movies. I would definitely like to stay at her house in the evenings more. Watching the news all night was getting a little boring! I even had to miss the Kate and PIppa biography on E! that I was really looking forward to seeing

A General Update

We are doing really well, busy but OMG busy! I am working in the kitchen, I still love my job, and wish it was more then just the 14 week semester. I love that gals that I work with, BUT there is a new girl this year and she is causing a LOT of turmoil. I think she will not be around for long. I have gotten over time for the past couple of weeks emoticon

David's job is still ok, loads and loads of over time. We just ordered 5 cord of wood and propane and have the $$ to pay for it, which you know is a plus. All we need now is new tires for the truck and we will be set for the winter.

Joel is active in band this year and loving it. He even had fun at the mandatory fundraiser last weekend. They are selling fruit now. He seems to be enjoying 6th grade. He has learned to stand up to his best friend that is a PITA. Also starting to hang out with other boys, which I am very thankful for.

Noah is still a struggling reader, but enjoying the extra help Ms. P gives him everyday. She is a super sweet person, and they really click together. He does not play with many children on the playground which is typical for a kid on the spectrum. But he includes ALL of his class mates as friends so there is a special connection there.

I think that is an update on everyone but me. I am enjoying work, and prepping for a long winter's sleep. I am determined to finally finish that stinking course I signed up for almost 3 years ago, and will be paid in full. I will get laid off just after Christmas and will have 5 months until the boys get out of school, which should be enough time.

I have also decided to take loosing weight a bit more seriously. I am so sick of not liking who I am or what I look like. I spoke with my doctor and decided on a program that we think will help me. I will post about that as I progress in the program.

So all in all a good update from here emoticon

I really enjoyed this book and got a lot more out of it than I'd originally thought I would. My family is starting to struggle with eating a family dinner together, with both parents working outside the home, and two growing boys that are getting more involved with social activities. There is lots of food for thought in this book and you will enjoy all the discussion questions and ideas to implement with your own family! I know I have.

My family enjoyed this recipe very much.

Mama's Macaroni and Cheese (serves 6)
5 cups cooked elbow macaroni (about 1 pound dry)
3 Tablespoons butter
2 Tablespoons flour
1 Teaspoon kosher salt
2 cups 2% milk
2 cup cubed America cheese
1 cup shredded cheddar cheese
1 cup seasoned bread crumbs

Preheat oven to 325 degrees. Spray 9 x 13 baking dish with nonstick cooking spray. Boil pasta as directed on package. Drain. Melt butter in heavy saute pan, and whisk in flour and salt, just until golden brown. Add pepper to taste. Add cubed American cheese, blending until melted. Add shredded cheddar and blend until melted. Add cooked macaroni and toss to coat. Spread mixture into prepared baking dish and sprinkle top with bread crumbs. Freeze if desired. Before baking, thaw completely. Bake uncovered for 1 hour or until knife comes out clean when inserted.

Science experiment

Over the weekend the boys and I did a science experiment.



If you have never done this, do it. My boys and I were amazed and completely thrilled.

I tried to take a photo of the actual eruption, but it happened so quickly I was unable to.

I am trying really hard to get my boys interested in science a bit more then they are in school. This experiment really helped.

For the month of October we are going to work on growing our own crystals. We are all excited about it.
